4 ozs Tofu
1 cup Brown Rice (cooked)
1/2 cup Broccoli (steamed)
1 Red Bell Pepper (sliced)
2 tsps Soy Sauce
1/2 Lime
Sprinkle tofu slices with salt and pepper and place on a microwave safe plate, alongside brown rice; microwave until warm. Serve with steamed broccoli and sliced fresh bell peppers. Drizzle with soy sauce and a squeeze of lime.
