Ingredients
1 Tbsp Extra Virgin Olive Oil
3/4 tsp Garlic (fresh, crushed)
1/2 tsp Dried Oregano
1/4 tsp Dried Thyme Leaves
1/4 tsp Sea Salt
1/4 tsp Pepper (fresh)
7 oz Firm Tofu, cubed
1 cup Kale (baby leaves
1/4 cup Brown Rice (cooked)
1/4 Orange Bell Pepper
1 Florets Broccoli (steamed)
1/4 Avocado
1 Tbsp Hummus (plain)
1/4 Lemon Juice (generous squeeze)
Directions
- In a medium container, add 1 Tbsp oil and crushed garlic.
- Add in the dried herbs along with the salt and pepper.
- Pour fresh lemon juice, and stir. Add in the tofu cubes.
- Shake for a minute or until the cubes are nicely coated with your marinade. Marinate for 24 hours, if you can.
- In a large non stick pan, heat 1 Tbsp of oil on medium /high. Gently fry the tofu cubes, rotating gently to ensure all sides have a crispy coating.
- Once done, place tofu cubes on a plate lined with paper towel to soak up any excess oil. Set aside.
- Fill the base of your bowl with baby kale, followed by 1/4 cup of brown rice, peppers, broccoli, avocado, hummus and the crispy tofu cubes. Finish with a generous amount of fresh lemon juice.
- Serve immediately and enjoy!
